Paolo Sorbini

Paolo Sorbini was born on 5 July 1926 in a family of pharmacists of Montepulciano, in the district of Siena. He graduated in pharmacy at Parma University in 1951. One year later he got married to the colleague Franca Garavaglia and they had three sons: Maurizia, Pino and Alberto. Meanwhile he worked in the family pharmacy in Milan. Among the clients, Gino Bartali, fond of a preparation of kola nuts called Peptocola. In 1954 he founded the Also, a pharmaceutical company pionieer of active principles got from natural plant extracts. In 1972 he opened the plant of Zelbio, near the Como lake. As a friend of Vincenzo Torriani, leader of the Giro d'Italia, he took care of the medical assistance of the race and created the Giroclinica. Curious of everything new and interesting, he undertook an important research starting from cyclists and their "fuel": nutrition, a field where he broke firm dogma. Instead of salt, at that time in vogue among athletes, he tested potassium and magnesium aspartates. He eliminated sugar to overcome critical moments and he discovered the benefits of fructose, able to give energy without rising the level of glycaemia and insulin. In the early eighties he founded Equipe Enervit, a free association of physicians, scientists and sport technicians aiming to do research applied to sport. With his personality and energy, he drew the attention of many champions. He worked at Sara Simeoni's side, gold medal of high jump at Olympic Games in 1980 and at Francesco Moser's side for his record. Then he was with Reinhold Messner for the "eight thousanders" (8000 meter peaks), with the ace of skiing Alberto Tomba, with the champion of fencing, Valentina Vezzali. He discovered in the proteins of milk, those obtained through cold ultrafiltration, the means to enhance muscles. And he realized that his athletes not only improve their performance, but they also lose weight obtaining even better results. New company successful products were launched, such as the Enervit Protein, one of the first steps towards a real change in nutrition not only for athletes, summarized in the well-known slogan "Strong and Slim". Intolerant towards absolute certainty, fascinated by new frontiers, he found confirmation to his intuitions by travelling all over the world. He examined the properties of spelt in Chile, he experimented the sugar cane in Mauritius, he studied the adaptation at a high altitude in Tibet, the turmeric and Omega 3 in Okinawa, the city of centenarians. He was a tireless explorer, he anticipated the great topics of world dietetics. He created the foundations of a new nutritional strategy oriented toward wellbeing: a "New Nutrition" which would have revolutionized the firm beliefs of the last fifty years. At first sceptical, the academic world started getting interested in his results. With the Universities of Milan, Pavia, Siena and Catania he intensified the research on proteins, carbohydrates, fats, antioxidants and natural anti-inflammatory. In the last years of his life Paolo Sorbini focused on low-glycemic-level food and new carbohydrates that help keeping a young body and mind.
